Best Stuffed Veggie Cones

Ingredients

  • Green bell peppers – 1, finely chopped

  • Onion – 1 medium, finely chopped

  • Del Monte Fresh Cut Whole Kernel Corn (15.25oz) – 1, drained and washed

  • Mozzarella Cheese – 1 cup

  • Salt – According to taste

  • Pepper – According to taste

  • White bread – 24 pcs

  • Butter – 6 tbsp

  • Swad Mint chutney (7.5oz) – 1

  • Garlic butter – to brush the cones
  • Garlic – 4 crushed

  • Oregano – 2 tsp

  • Red chili flakes – 1 tsp or according to taste

Directions

  • Preparing the stuffing
  • In a large bowl, add the green peppers, onions, corn, mozzarella cheese, salt, pepper, mint chutney and mix it.
  • Use a mallet/ masher to slightly mash the stuffing. Set aside
  • Preparing the cones
  • Cut the crust of the bread and cut each slice to triangle.
  • Using a rolling pin, roll each piece/triangle of the bread to flatten . (see pictures above)
  • Wet one end of the triangle and shape the bread into a cone by folding the opposite edge. (see pictures above)
  • Repeat for all bread pieces.
  • Garlic butter
  • In a bowl, place the butter and melt ( I microwave it for about a minute)
  • Add the garlic, oregano, red chili flakes and mix it.
  • Preparing the veggie cones
  • Heat oven to 370 ° F
  • Take each cone and fill them with the stuffing. Repeat for each cone.
  • Place them on a baking sheet and brush with garlic butter. (the more butter the better, of course!! )
  • Place the baking sheet with stuffed cones brushed with garlic butter in the middle rack of the over and bake for 12-14 min.
  • Optional – you can also broil on high (525 ° F ) for about 2 minutes.
  • Serve hot.
