7 Ingredients Fudge Scotchies | Blondies

Okay ! Given that I do not eat chocolate any more (for various reasons), I really miss eating brownies, those were my go to during “not so” good days !

But my love for brownies is forever, so I decide to make blondies with a twist ! BUTTERSCOTCH CHIPS !!!

You will just not believe how awesome they come out, you need to let them rest for a good 5 minutes and eat them warm ! (drooling as I am thinking about it). Anyway !!! let’s get to the recipe.

  • 1 stick Butter, melted

  • 3/4 cup Sugar (I use 1/2, to reduce the sweetness)

  • 1 Egg

  • 1 tsp vanilla extract

  • 1 cup flour

  • 1/2 cup butterscotch chips

  • 1/8 tsp Salt


  • Preheat oven to 350 F, prepare an 8 inch baking pan by greasing it.
  • Beat the butter (should be cooled) and sugar at medium speed (if using a standing mixer, beat at 4 speed) for about 5 minutes or until light and well blended
  • Add vanilla extract and egg and beat for another 5 minutes, it should be light and fluffy at this point
  • Using a spatula, gently fold in the flour and salt (see picture on how it looks like), add the butterscotch chips and fold the batter until incorporated
  • Transfer the batter into the pan and bake for 22 minutes (this also depends on your oven), if needed you can bake 25 minutes.
  • Transfer onto a cooling rack, let cool for 5 minutes and serve warm


  • You can ofcourse make these as brownies by replacing 1/4 cup for flour with cocoa powder and use choco chips instead of butterscotch chips
