Banana Nut Muffin

Did someone say Muffins???? I love to start my day with muffins but you know I also try to not take in too much sugar in the morning .

I came across a recipe from RM Recipe collection which was apple nut muffins, but APPLE?? Umm its not for me. So I wanted to try the recipe with Banana? But at the same time I wanted a healthy version. so I tried the recipe few times to get the perfect texture by swapping out the white flour to whole wheat flour.

Ingredients


  • Egg – 1


  • Milk – 2/3 cup


  • Vegetable Oil – 1/2 cup


  • Vanilla Extract – 1 tsp


  • Whole Wheat Flour – 1.5 cups


  • Sugar – 1/4 cup [optional if you want the muffin to be sweeter]


  • Brown Sugar – 1/4 cup


  • Baking Powder – 1 Tbsp


  • Salt – 1/2 tsp


  • Chopped Nuts – 1/2 cup or as preferred [ I use Walnuts]


  • Banana- 2 medium, smashed

Directions

  • Start by greasing 12 medium muffin tray and preheat the over to 400°F
  • In a bowl beat egg with milk, oil and vanilla on medium speed for 2-3 minutes
  • Now stir in flour, sugars, baking powder, salt and mix it until the dough is moistened. [Can be lumpy]
  • Let the dough rest for about 10 min
  • Add the nuts and the mashed banana and fold them into the batter.
  • Fill the muffin tray with the batter and bake for 20 min or until golden brown.
