Comforting Vegan Chickpea Curry

Ingredients

  • 1 can Chickpea, drained and washed

  • 1 medium Onion, diced

  • 1 large Tomato, diced

  • 1 tbsp Ginger Garlic Paste

  • 1/3 cup Water

  • 2 Bay leaves

  • 2 tsp Chilli powder

  • 2 tsp Cumin Powder

  • 1 tsp Turmeric Powder

  • Cilantro finely chopped

  • 1 tbsp Olive Oil

  • acc to taste Salt

Directions

  • In a pot, heat oil over medium-high heat. Add bay leaves and saute for 5 sec, add onions, cilantro, salt (about 1/4 tsp), turmeric and let cook until onions are translucent.
  • Add ginger garlic paste and saute for about 2 -3 minutes.
  • Add the tomatoes and let cook covered for 5-6 minutes or until tomatoes are soft and mushy. Add cumin powder and chilli powder and saute for 2-3 minutes
  • Now add the drained chickpeas and stri in with the tomato and onion gravy, pour water and stri. Check for salt and add as needed to your taste.
  • Let cook covered for 3-6 minutes. Squeeze lime juice if you want. Serve hot with Rice or Roti

Notes

  • To make your gravy think, you can smash handful of chickpeas and add it to along with the chickpeas
