Ingredients

  • Yellow Lentil (Masoor Dal) – 1 cup

  • Water – 3 cups for cooking + 1.5 cup

  • Vegetable Stock – 2 cups

  • Turmeric – 1/4 tsp

  • Whole cumin – 1/2 tsp

  • Cilantro – handful, chopped

  • Garlic – 3 cloves, minced

  • Lemon – 1/2

  • Salt – to taste

Directions

  • If you have instant pot / any pressure cooker, then add the 1 cup of lentil and 3 cups of water and cook on high pressure for 12 minutes.
  • If cooking on stove top, then on medium heat, add water let boil and add lentil and cook until soft and mushy
  • If Instant pot, then turn on saute mode (if stove, in a large pot, on medium heat add the lentil and mash), add the vegetable stock + remaining 1.5 cup, turmeric, cumin, garlic and cook for about 10 – 15 min. Taste and add salt as needed.
  • Add 1/2 lime and garnish with cilantro.
  • Serve hot with rice.
