Vegetable Street Noodles

Noodles???.. Yes !!!!

Street style or Indo-Chinese noodles are pretty famous in India. An ideal evening in India (or the place I grew up) would be sitting by the beach, ordering street noodles and gossip with best friends.

I really miss those days especially after I moved to the US, I still crave for street noodles. After a lot of try and error I got almost the right flavor.

The main difference would be is to use a wok. It will help to cook vegetables faster than frying pan.

Ingredients


  • Pad Thai brown rice noodles – 1

  • Red bell pepper – 1/2, rough chop

  • Cabbage – 1/4 cup, chopped

  • Onion – 1 small

  • Carrot – 1 medium, shredded

  • Green onions – 2, chopped

  • Olive Oil – 1 tbsp

  • Red chili paste – 2 tbsp or to taste

  • Rice vinegar – 3 tsp

  • Red wine vinegar – 1.5 tsp

  • Garlic – 3 cloves, minced

  • Liquid Bragg Amino / Soy Sauce – 2 tsp

  • Coriander powder – 1/2 tsp or to taste, optional

  • Garam masala – 1/2 tsp or to taste , optional

  • Chili Powder – 1/2 tsp or to taste , optional

  • Salt – According to taste , optional

Directions

  • Start with cooking the noodles according to package instructions, strain and set aside but make sure you do not over cook. (I cook for 6-7 minutes , drain the hot water and was with cold and set it aside)
  • In the meantime chop all the vegetables as needed.
  • To make it easy when cooking, mix dry and wet ingredients separately.
  • Heat a wok or a large frying pan to medium -high heat , add oil and swirl around and add garlic. Stir-fry for 30 – 50 sec.
  • Now add onion and saute for 2-3 minutes until tender but not fully cooked.
  • Mix in the cabbage, carrot and bell pepper and saute for another 4-5 min (not fully cooked)
  • Add the dry and wet ingredients and fry for 4-5 minutes or as desired
  • Remove from heat and fold in the green onions and do a taste test
  • Serve hot with lime and onions.

Notes

  • I used only cake of the noodles.
