Vegan One Bowl Carrot Pudding

Carrots !!! When I was a kid I hated carrots, the only way I would eat carrots would be if my mom made carrot pudding. Such a delicious dessert, I would eat the whole thing if I could.

This easy 5 ingredient, one bowl is sooo easy to make.

Ingredients

  • Carrot – 4, grated

  • Non-Vegan Milk – 1 cup (Unsweetened and plain)

  • Sweetened Condensed Coconut Milk – 4 tbsp or more if needed

  • Cardamom – 1/4 tsp, powdered (Optional for taste)

  • Olive Oil – 1 tbsp

Directions

  • Add oil in a pan and heat on medium-high heat, add the grated carrot and cook for 3-4 min. (make sure it doesn’t burn)
  • Reduce the heat to medium, mix the milk with grated carrot, cover and cook for 3 min.
  • Remove the cover and cook until milk evaporates for about 5 min.
  • Add the condensed milk, cardamom powder and let it cook until you get the desired consistency or for another 6-7 min (Can add more condensed milk as you desire)
  • Server hot and enjoy !!
