Roasted Red Pepper Hummus Dip

Most of my recipes come from Richard’s mom recipe book and she is of course one of my major inspirations to start the blog  This post is dedicated to her.

If you are using canned chickpeas then I would suggest to take the skin off for a creamy texture. Internet definitely makes are lives more easier everyday and with the help of internet I found that baking soda can help remove the skin, WHAT !!!!!!

Yes, I know that is crazy. So I tried this on the canned chickpea and here is what I did.

I drained the chickpea and rinsed them, added about 1 – 1.5 tsp of baking soda for every 2 cups and heated them on skillet for couple of minutes or you can use microwave. Then rinse the chickpea and rub them vigorously between hands this will help with taking the skin off.

But if you are using dried chickpeas, which of course yields most flavorful hummus. Soak chickpea overnight or for about 8 hours, once soaked drain them and add about 1 – 1.5 tsp of baking soda for every two cups and heat them on the skillet for couple of minutes and add water and let it cook. Once cooked you should see that the skin gets separated from the chickpea.

You can use Tahini paste instead of toasted sesame seeds, I personally prefer sesame seeds because it has low calories than tahini.

If you don’t have red pepper you can use green pepper, it doesn’t need to be roasted.

Ingredients

  • Garbanzo Beans – 15.5 oz

  • Green pepper – 1/2

  • Toasted sesame seeds – 1/2 cup

  • Garlic – 2 cloves

  • Parsley – 1/4 cup

  • Lime – 1/2

  • Salt – 1 tsp

Directions

  • If you want a creamy texture, be sure to remove the skin of the bean. (follow my instructions above)
  • Add all the above ingredients into a food processor.
  • Blend into a smooth texture by adding olive oil. You can add more olive oil to attain the consistency you desire.
  • Can be served with chips or falafel.
