  • Sweet corn kernels – 12 oz or 1 can

  • Corn starch / flour – 1.5 tbsp or as needed, mixed with 3 tbsp of water

  • Green peas – 1 cup

  • Carrots – 1 cup (I use frozen carrot and green peas)

  • Scallion – 2, chopped

  • Vegetable Stock – 7 cups

  • Oil – 1 tbsp

  • Pepper – to taste

  • Salt – to taste

  • Ginger – 2 inch, peeled and minced

  • Garlic – 4 cloves, peeled and minced

Directions

  • In a blender, add 1/4 cup of sweet corn and make a paste.
  • Use a heavy bottom pan, add oil and heat to medium heat. Add ginger and garlic and saute for 1 min.
  • Mix in the vegetables, remaining corn, salt and pepper, saute for 4-5 min.
  • Add vegetable and corn paste (step 1) and cook for 5 min
  • Mix in the corn flour / starch paste and let boil for about 30 – 40 min. Taste and adjust accordingly.
  • Garnish with scallion and serve hot.

Notes

  • You can use corn starch to thicken the soup vs corn flour.
