Lightly spiced soup cooked with sweet corn and mixed vegetables. A very easy soup you could cook at home by just throwing in all the ingredients
One Bowl Sweet Corn Soup

Sweet corn kernels – 12 oz or 1 can
Corn starch / flour – 1.5 tbsp or as needed, mixed with 3 tbsp of water
Green peas – 1 cup
Carrots – 1 cup (I use frozen carrot and green peas)
Scallion – 2, chopped
Vegetable Stock – 7 cups
Oil – 1 tbsp
Pepper – to taste
Salt – to taste
Ginger – 2 inch, peeled and minced
Garlic – 4 cloves, peeled and minced
Directions
- In a blender, add 1/4 cup of sweet corn and make a paste.
- Use a heavy bottom pan, add oil and heat to medium heat. Add ginger and garlic and saute for 1 min.
- Mix in the vegetables, remaining corn, salt and pepper, saute for 4-5 min.
- Add vegetable and corn paste (step 1) and cook for 5 min
- Mix in the corn flour / starch paste and let boil for about 30 – 40 min. Taste and adjust accordingly.
- Garnish with scallion and serve hot.
Notes
- You can use corn starch to thicken the soup vs corn flour.
